Returning to Vietnam after working and creating in many kitchens around the world, Chef Sam Tran hoped to bring a high-end and modern flavour experience, with full respect for the essence of Vietnamese culture and cuisine at her own restaurant, Gia, where she has been at the helm for nearly four years. Under her leadership, Gia has earned prestigious recognition, securing a coveted one-star Michelin rating in both 2023 and 2024.
“Through each dish at Gia, I want to tell the story of Vietnamese culture. I want to tell the story of each piece of my life, the regions I have visited, the flavours passed down from generation to generation that I have tasted. These are stories worth discovering, preserving, and sharing.”
Beyond Gia, Chef Sam co-founded and led Le Goût de Gia, a wine bar-bistro restaurant, for two years. Her work there showcased a seamless fusion of modern cuisine and selected natural wine, earning the restaurant a place in the prestigious Michelin Selected list in 2023.

About Chef Jeong Jinhwan (Bruno)

Chef Bruno’s passion for cooking was ignited during his formative years in high school, inspired by his father’s culinary prowess. This sparked a culinary journey that would shape his destiny, taking him on a global exploration of flavours and techniques. From bustling kitchens in Singapore to vibrant food scenes in Melbourne and Sydney, he immersed himself in diverse culinary traditions, constantly refining his skills and expanding his horizons.
After gaining valuable experience in international kitchens, Chef Bruno made the decision to return to Korea, where he encountered his mentor, Chef Sung, and assumed the role of Sous Chef at Mosu Seoul. It was during his tenure there that Mosu Seoul earned two Michelin stars, a testament to Chef Bruno’s remarkable talent and leadership skills.
Today, as the Head Chef at Mosu Hong Kong, Chef Bruno combines his profound knowledge of diverse culinary traditions with his innovative spirit, crafting an extraordinary dining experience that surpasses all expectations. With his wealth of experience and Mosu’s commitment to innovation, Chef Bruno effortlessly adapts his expertise in utilising different ingredients and employing various techniques, finding deep satisfaction in his craft.
